Coffee is an integral part of South Indian heritage. In the Southern states, it is almost impossible to imagine a morning without the soul-stirring aroma of filter coffee. Authenticity in this region is defined by the “Degree Coffee” a drink so synonymous with tradition that it has shaped the social fabric and history of Tamil Nadu. Since the early trade days, coffee beans from the mist-covered hills have held significant value. With heavy demand, the star of the show, the Peaberry bean, often referred to as “South Indian Gold,” is valued for its unique intensity and rare sweetness, representing the pinnacle of the Indian coffee legacy.
However, unlike the historical eras when trade monopolies dictated the flow of produce, the modern coffee industry has evolved into a dynamic and decentralized global marketplace. Today, the appreciation for speciality coffee transcends borders, with diverse cultures integrating South Indian beans into a wide array of brewing techniques and culinary expressions. This global shift has opened unprecedented trade opportunities, allowing the unique, earthy notes of our Arabica and Robusta varieties to introduce bold new flavours to cafes and kitchens worldwide. At Achrekar Merchants, we have a dedicated team working continuously to meet increasing global demands by developing new and improved coffee varieties and signature combination blends, such as our iconic 90/10 and 80/20 Degree Coffee.

We strictly adhere to global regulatory requirements for pesticides and moisture levels, delivering world-class safety while passionately maintaining the authentic, soul-stirring flavours of South Indian coffee.

Sensory Tasting

Before creating any new coffee roast or speciality blend, our R&D team performs a rigorous sensory analysis to map out the cupping notes and flavor potential of the control sample.

Once the organoleptic parameters including aroma, acidity, body, and finish are evaluated, we design a precise roasting profile and formulation. We iteratively refine this blend, comparing it against the control until the match is perfect. Following a critical degassing period to allow the flavors to stabilize, the samples are either sent to international clients for evaluation or put through rigorous in-house brewing trials. Only after final team approval do we release the samples to our global partners to confirm they meet the highest market standards.
